Irradiated foods stir up false fears
Irradiation has been around for years, used particularly with ground beef, a favorite spot for E. coli infection. Some 15-18 million pounds of U.S. ground beef are irradiated every year — a small fraction of the nation’s hamburger. Germs also are killed by thorough cooking, but the key word is “thorough;” people often fail to get the meat hot enough. In addition, irradiation does not eliminate all bacteria. Some are not affected by dosage levels used on foods. These include the botulism-causing Clostridium and Deinococcus radiodurans, which actually repairs its own DNA after exposure. Surviving bacteria pose a concern because they inevitably produce resistant generations until irradiation becomes an ineffective method of sterility.
